Vánoční klasika, která nesmí chybět na svátečním stole (alespoň u nás doma). Veganský bramborový salát je super a můžete ho povýšit ještě o domácí majonézu (nebo ji prostě koupit, v dnešní době seženete veganskou v každém větším supermarketu). Určitě se vyplatí dělat ho víckrát než jednou v roce – skvěle chutná např. na chlebíčku.
Trvalo to asi tři roky než jsem recept vyladila a teprve teď můžu říct, že tenhle je NEJLEPŠÍ. Od kupované sojanézy jsem se přesunula k pokusu s jogurtem (aby byl salát lehčí) přes domácí kešu smetanu až to nakonec vyhrála domácí veganská majonéza z aquafaby (cizrnového nálevu). Oproti té z kešu je levnější, rychlejší a nemá tak výraznou oříškovou chuť. IDEÁL.
Aktualizace: Veganská nabídka se rozrostla o další skvělé produkty včetně majonézy. Pokud se s ní nechcete dělat doma, sáhněte po majonéze od značky Hellman’s – má nejlepší chuť a z reakcí ostatních (veganů) na sociálních sítích bych řekla, že vás určitě nezklame.
Nejvíc mě na salátu baví příprava, která u nás probíhá na Štědrý den – nakrájí a uvaří se zelenina, oloupeme brambory, v mezičase připravíme majonézu, vše smícháme a pokud salát vydrží několik dní, chutná ještě lépe.
P.S.: Brambory a okurky! Věnujte pozornost jejich výběru.
Brambory kupujte salátové, varný typ A. A protože nepředpokládám, že máte zásobu domácích okurek, myslete také na to, že jejich chuť, která se promítne v salátu, je ovlivněna lákem a dostatečnou křupavostí = okurky musí být pevné. Já mám nejradši ty z obchodu Marmelády s příběhem (pikantní verze s chilli, level up!), kam jsem si dřív chodila pro skvělá sušená rajčata nebo bylinkový olej. Jinak tam najdete, samozřejmě a nečekaně, hlavně marmelády.
Doba přípravy: 50 minut
INGREDIENCE
- 2 kg brambor (salátové, varný typ A)
- 3 mrkve
- 2 petržele
- 1/2 celeru (bulvového)
- 1/2 cibule
- 4 nakládané okurky
- 150 g sterilovaného hrášku*
- sůl
- čerstvě mletý pepř
- veganská majonéza
*Použít můžete i mražený, ten uvařte společně se zeleninou.
POSTUP
- Brambory dejte do hrnce, zalijte studenou vodou, přiveďte k varu a vařte do změknutí (asi 20 minut). Nechte vychladnout, oloupejte a nakrájejte na kostičky.
- Mrkev, petržel a celer oloupejte, nakrájejte na kostičky, přendejte do hrnce, zalijte vodou a také vařte do změknutí (asi 10 minut).
- Brambory a kořenovou zeleninu smíchejte, přidejte najemno nakrájenou cibuli, nakrájené okurky a hrášek. Promíchejte.
- Zeleninu promíchejte s domácí veganskou majonézou a zlehka osolte a opepřete podle chuti.
- Salát uchovávejte v lednici přikrytý fólií.
